
Barbecued Duck
1 Duck, quartered
1 cup Barbecue Sauce
Salt and Pepper
Remove excess fat from duck. Place quarters, skin side up, and pound flat with a mallet. This will help them lay flat on the grill. Sprinkle with salt and pepper. Marinate in barbecue sauce for 1 to 2 hours. Place duck, skin side down, on hot grill. Baste and turn as often as necessary. Cook around 30 to 40 minutes. Check for doneness. Do not overcook.
