Campfire Grayling

 

4  Arctic Grayling, 10" – 13"

2 Eggs, beaten

6-8  tablespoons Butter

½ cup cornmeal

 

Remove heads, entrails, and scales from grayling.  Dip fish in egg and roll in cornmeal.  Saute them in butter in a large skillet until done.  About 20 minutes over a slow fire.
