Fried Muskrat and Onions

 

1 Muskrat

½ cup Flour

¼ teaspoon Paprika

1 teaspoon Salt

4 tablespoons Lard or Bacon Grease

1 medium Onion, sliced

 

Remove the two scent glands under the front legs and two in the small of the back of the muskrat.  Cut muskrat into pieces and soak overnight in salt water (1 tablespoon salt to 1 quart water).  Put flour, paprika, and salt in a small plastic bag.  Add muskrat pieces and shake until they are well coated.  Melt fat in skillet and sauté slowly until browned on each side.  Smother with fried onion slices.
