Golden Fried Ruffed Grouse Strips

 

1-2 Grouse breasts, filleted

2 Eggs, beaten

1 cup Flour

Cooking oil

Salt and pepper

 

Cut breasts into strips approximately 1 inch wide by 1/2 inch thick.  Dip strips into eggs.  Then roll in flour seasoned with salt and pepper.  Heat 1/4 inch oil in medium size frying pan.  Add grouse strips to pan and cook 2-3 minutes on each side until golden brown.
