Ptarmigan Stir Fry

 

2 Ptarmigan breasts, filleted

1 Bell pepper, cored and sliced

1/2 Onion, sliced

1 Carrot, chopped

1 cup Fresh peas, in pod

1 cup Broccoli

2 teaspoons oil

 

Marinade

1/2 cup Soy sauce

2 tablespoons Lemon juice

1/2 teaspoon Curry powder

 

Combine marinade ingredients in mixing bowl.  Cut Ptarmigan breasts into bite size pieces.  Add Ptarmigan and vegetables to marinade, mix thoroughly.  Drain excess marinade.  Add oil to skillet.  When oil is hot, add Ptarmigan and vegetables.  Stir fry for 10-12 minutes until meat is done and vegetables are tender.  Serve with rice or noodles.  May substitute Ptarmigan with chicken, turkey, pheasant, grouse, etc.
